Thai-Style Salmon Parcels
- 2 ounces butter
- 4 salmon fillets
- 6 scallions, sliced
- 1 green chili pepper, de-seeded and finely sliced
- 1 lime, Zest and juice
- 1 -2 tablespoon cilantro, freshly chopped
- 8 fresh lime leaves (fresh or dried)
- 2 sticks lemongrass, each halved lengthways
- Generously butter four pieces of thick foil.
- Place a piece of fish on top of each piece of foil and then divide the scallions, chili, lime juice, cilantro and lime leaves equally between each one.
- Dot any remaining butter on top and place a piece of lemon grass stick on top.
- Fold up the foil securely to form a parcel, making sure the seams are at the side.
- Cook on the grill for 12-15 mins until the fish is cooked through.
- Serve immediately.
