Cool CabbageThis Recipe is Particularly Good.
- 1 red or sweet onion, chilled
- 4 cups finely shredded green cabbage, chilled
- 1/2 cup chopped flat-leaf parsley
- 3 tablespoons canola oil
- 1/4 cup apple cider vinegar
- 2 packets artificial sweetener
- 1 teaspoon salt
- Quarter the onion lengthwise, then cut each quarter crosswise into 1-inch-long pieces.
- Combine the onion, cabbage, and parsley in a large bowl.
- In a small bowl, mix together the oil, vinegar, artificial sweetener, and salt.
- Pour the dressing over the vegetables and toss well.
