Arugula And Shrimp Salad Recipe
- 1/2 tsp finely-grated orange peel
- 2 Tbsp. fresh orange juice
- 2 Tbsp. seasoned rice vinegar
- 4 ounce rinsed and crisped arugula - (4 c.) (or possibly baby spinach leaves)
- 4 ounce shelled cooked tiny shrimp Salt to taste Freshly-grnd black pepper to taste
- 2 x crusty French rolls - (2 ounce ea)
- In a large bowl, mix orange peel, orange juice and seasoned rice vinegar.
- Add in arugula or possibly spinach and shrimp; mix and add in salt and pepper to taste.
- Divide between two salad plates and set a French roll alongside.
- This recipe yields 2 servings.
