Greek Flatbread Pizzas

  1. Heat the olive oil in a deep skillet on medium high heat and add the garlic.
  2. Saute for about 1 minute.
  3. Add the spinach and toss to coat in the garlic oil.
  4. Saute for another 2-3 minutes, or until the spinach is wilted.
  5. Season with a pinch of kosher salt.
  6. Preheat oven to 425 degrees F. Lay both pieces of flatbread on a cookie sheet.
  7. Top each flatbread with half the spinach, then half the mozzarella cheese.
  8. Sprinkle with as much feta as desired.
  9. Then top each flatbread with half the tomatoes, olives, and a few slices of red onion.
  10. Bake at 425 degrees F for 8-10 minutes, or until cheese is melted and flatbreads are golden brown.
  11. Cool for a few minutes before slicing.
