Greek Flatbread Pizzas
- 2 Tablespoons Olive Oil
- 1 Tablespoon Minced Garlic
- 10 ounces, weight Fresh Spinach, Washed, Dried, And Stems Removed
- 1 pinch Kosher Salt
- 2 whole Flatbreads
- 1 cup Mozzarella Cheese, Shredded
- Feta Cheese Crumbles, To Taste
- Handful Grape Tomatoes, Cut In Half
- Handful Pitted Black Olives, Cut In Half
- 1 whole Thin Slice Red Onion, Separated Into Rings
- Heat the olive oil in a deep skillet on medium high heat and add the garlic.
- Saute for about 1 minute.
- Add the spinach and toss to coat in the garlic oil.
- Saute for another 2-3 minutes, or until the spinach is wilted.
- Season with a pinch of kosher salt.
- Preheat oven to 425 degrees F. Lay both pieces of flatbread on a cookie sheet.
- Top each flatbread with half the spinach, then half the mozzarella cheese.
- Sprinkle with as much feta as desired.
- Then top each flatbread with half the tomatoes, olives, and a few slices of red onion.
- Bake at 425 degrees F for 8-10 minutes, or until cheese is melted and flatbreads are golden brown.
- Cool for a few minutes before slicing.
