Gimlet

• 2 ounces Plymouth gin
• 3/4 ounce homemade Lime Cordial (page 157)
• 1 lime wheel, for garnish

1. Pour the gin and cordial into a mixing glass.
2. Add large cold ice cubes and shake briefly but with conviction.
3. Strain into a rocks glass over large cold ice cubes and garnish with a lime wheel.
4. Dominant Flavors: juniper and lime
5. Body: medium with sweet-sour tongue coating
6. Dryness: dry to medium
7. Complexity: medium
8. Accentuating or Contrasting Flavors: hints of kaffir lime oils with honeyed agave
9. Finish: long, lingering, gasping-for-air finish
10. Glass: rocks
