Cranberry-Oat White Surprise Cookies
- 2 cups oats (old-fashioned)
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 14 teaspoon cinnamon
- 14 teaspoon salt
- 1 (15 1/2 ounce) can cannellini beans, rinsed and drained (white kidney beans)
- 14 cup butter
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 12 cup white chocolate chips
- 12 cup dried cranberries
- Preheat oven to 350F.
- In the bowl of a food processor, pulse the oats until they resemble a coarse flour.
- Add the flour, baking soda, cinnamon and salt and process until combined.
- Transfer to a large bowl.
- Put the beans, butter, brown sugar, egg and vanilla into the food processor and process until smooth.
- Pour the bean mixture into the oat mixture and stir by hand until almost combined.
- Stir in the white chocolate chips and cranberries.
- Drop Tablespoonfuls of dough onto a parchment lined (or non-stick sprayed) cookie sheet and then gently flatten each one with a water-dampened hand.
- Bake for 14-16 minutes or til golden on the edges and soft in the middle.
- Transfer to a wire rack to cool.
