Coco Cherry Chicken

  1. Stir together cornstarch and lemon juice; stir in cherries.
  2. Combine flour and spices in a bag; add chicken and shake to coat.
  3. Brown chicken over medium-high heat in skillet sprayed with nonstick cooking spray.
  4. Add water, reduce heat; cover and simmer about 20 minutes or until chicken is tender.
  5. Remove chicken from pan and cover with foil.
  6. Remove all but 1 tbsp drippings from pan; add cherry mixture and bring to a boil.
  7. Cook until sauce thickens.
  8. Place chicken onto serving plates, pour cheery sauce over chicken and top with coconut.
