Working Mom's Beef and Potato Casserole - Beef and Potato Casserole

  1. Place potatoes on bottom of 8 inch x 12 inch casserole.
  2. Bake, uncovered at 400 degrees (200 C.) for 10 minutes.
  3. Meanwhile, brown beef into large chunks and drain.
  4. Place beef, broccoli, 1/2 can Durkee onions and tomatoes in potato shell.
  5. Combine soup, milk, 1/2 cup (125 ml) cheese and seasonings.
  6. Pour over beef mixture.
  7. Bake covered at 400 degrees (200 C.) for 20 minutes.
  8. Top with the remaining cheese and onions.
  9. Bake uncovered 2 to 3 minutes longer until cheese melts.
