Mint Vinegar
- 4 cups cider vinegar
- 1 cup sugar
- 1 cup spearmint, leaves loosely packed (include young stem tips)
- Bring vinegar to a boil; stir in sugar and spearmint.
- Stir and crush; simmer five minutes.
- Strain into hot jars and cool to room temperature.
