Limantro Tofu
- 1/4 cup chopped cilantro
- 3 cloves garlic, minced
- 1 lime, zested and juiced
- 1 1/2 teaspoons soy sauce
- 1 teaspoon ground cumin
- 1/2 teaspoon brown sugar
- 1/2 teaspoon cayenne pepper
- 1 (12 ounce) package firm tofu, drained and cubed
- 1 tablespoon olive oil, or more if needed
- Mix cilantro, garlic, lime zest and juice, soy sauce, cumin, brown sugar, and cayenne pepper in a bowl.
- Add tofu and marinate in refrigerator for 1 hour to overnight.
- Remove tofu with a slotted spoon.
- Heat olive oil in a skillet over medium heat; cook and stir marinated tofu until browned on all sides, 10 to 15 minutes.
