Blackened Catfish

  1. Combine all of the dry ingredients into a small bowl and set aside
  2. Preheat frying pan to a medium high heat.
  3. Place the 2 tablespoons of oil into hot frying pan
  4. Dredge the fish in the spice mixture and place in frying pan.
  5. Cook for approximately 2 minutes per side
