Blackened Catfish
- 6 large fish fillets
- 2 tbsp vegetable oil
- 1 tsp salt
- 3 tsp paprika
- 4 tsp Onion powder
- 4 tsp garlic powder
- 2 tsp cayenne pepper
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp celery salt
- 1 tsp black pepper
- 4 tsp Lemon pepper
- Combine all of the dry ingredients into a small bowl and set aside
- Preheat frying pan to a medium high heat.
- Place the 2 tablespoons of oil into hot frying pan
- Dredge the fish in the spice mixture and place in frying pan.
- Cook for approximately 2 minutes per side
