No-Bake Summer Pie
- 1 shortbread pie crust
- 12 ounces Yoplait vanilla custard-style yogurt
- 12 teaspoon vanilla extract
- 2 ounces fat free cream cheese
- 2 tablespoons sugar
- 6 ounces fat-free cool whip
- 1 lb fresh strawberries
- 2 cups firm bananas
- Slice bananas and strawberries 1/4inch thick.
- Cream the cream cheese, sugar and vanilla.
- Fold in whipped cream.
- Place half of mixture in bottom of pie shell.
- Place sliced strawberries and bananas, alternating them until mixture is covered.
- Place rest of the whipped cream mixture on top of the fruit and place remaining fruit decoratively on top.
- I usually save the prettiest strawberry and put it on the top of the pie.
- Let refrigerate for 3-4 hours so it can set-up and slice easily.
