Pineapple-Lime Smoothie
- 1 cup fresh or frozen pineapple chunks
- 2 Tbs. mint leaves
- 2 tsp. lime juice
- 1/4 tsp. grated fresh ginger
- 6 oz. non-fat Greek yogurt
- 1 Tbs. chia seeds
- 2 tsp. honey (optional)
- Puree pineapple chunks with mint leaves, lime juice, and ginger in blender until mint is finely chopped.
- Add Greek yogurt, and blend until smooth.
- Stir in chia seeds and honey (if using).
- Let stand 5 minutes to thicken.
