California Rolls for Hinamatsuri

  1. White: drizzle some sushi vinegar onto freshly cooked rice.
  2. Mix together without crushing the rice grains.
  3. Pink: drizzle some sushi vinegar onto freshly cooked rice.
  4. Scatter the sakura denbu, mix together without crushing the rice grains.
  5. Green: drizzle some sushi vinegar onto freshly cooked rice.
  6. Scatter aonori, and mix together without crushing the rice grains.
  7. Cover the sushi mat with plastic wrap.
  8. Cut the whole nori sheet in half and place on the makisu.
  9. Use your fingers to cover with sushi rice in all three colors, making stripes about 1 cm (or slightly larger) wide.
  10. Turn over the wrap in Step 4.
  11. Arrange avocado and imitation crab sticks (cut into four wedges) horizontally.
  12. Use the sushi mat and roll up tightly.
  13. Stop and leave about 1/3 of sushi rice.
  14. Roll up making sure all the ingredients are pressed in.
  15. Cut into sixes using a damp knife and serve with soy sauce or wasabi soy sauce.
  16. Do not press down while cutting; pull your knife towards you.
