Fix Ahead Mashed Potatoes Casserole
- 5 medium white potatoes
- 12 teaspoon salt
- 2 tablespoons butter
- 2 (3 ounce) cream cheese
- 23 cup sour cream
- 14 cup milk
- 34 teaspoon salt
- 1 tablespoon butter, melted
- 12 teaspoon paprika
- Slice potatoes thin.
- Boil in water using 1/2 teaspoon salt until tender.
- Drain and mash.
- (May use electric mixer).
- Add butter, cream cheese, sour cream, milk and salt.
- Mix well.
- Place mixture in a greased 2 quart casserole dish.
- Brush top with melted butter and sprinkle with paprika.
- Bake or refrigerate.
- If refrigerated, let stand 30 minutes before baking in a 350 degree oven for 30 minutes.
- (Last 5 minutes of baking time may sprinkle 1/2 cup of shredded cheddar cheese on top.
