Date and Hazelnut Bites

  1. Place dates in 100ml of water, cover and leave in the fridge for around 4 hours.
  2. After the four hours, drain water (but retain 2 tablespoons) and place in a food processor with all the other ingredients (including the reserved 2 tablespoons water).
  3. Blitz for a couple of minutes until everything is well combined and chopped.
  4. Pour into tin lined with grease-proof paper and place in the freezer for an hour to harden.
  5. Cut into small squares and then keep refrigerated until ready to eat.
  6. Sprinkle with a little cocoa just before serving.
