Spicy Grilled Peach and Habanero Pepper Salsa
- 1 pound peaches peeled, halved and pitted, 4 large ones
- 3 slices red onion 1/4 inch thick
- 3 tablespoons cilantro freshly chopped
- 1 tablespoon lime juice freshly squeezed, or to taste
- 1 teaspoon honey or sugar
- 1 1/2 teaspoons orange zest freshly grated
- 1/2 teaspoon habanero chili peppers or to taste, seeded and finely chopped
- 1/4 teaspoon salt or to taste
- Prepare grill to medium-high heat.
- Lightly coat peaches and onion with cooking spray or brush with vegetable oil, such as olive oil, canola oil.
- Arrange peaches and onion on grill rack coated with cooking spray, grill peaches 2 minutes on each side.
- Let cool for a few minutes and coarsely chop peaches.
- Grill onion 3 minutes on each side.
- Let cool and coarsely chop onion.
- Mix together peaches, onion, cilantro, and remaining ingredients in a medium bowl, and toss until well mixed.
- Allow to stand for at least 15 minutes, or keep in the refrigerator until ready to use.
