A Spicy Garlic Soup Recipe
- 1 x , 8oz package mushrooms - sliced thin
- 1 bn scallions - sliced thin, including greens
- 1 lb medium peeled, devined and uncooked shrimp
- 2 x heads of garlic - peeled and chopped
- 2 Tbsp. all-purpose flour
- 4 x 14.5z cans beef broth
- 4 c. of water
- 2 Tbsp. butter
- 2 Tbsp. fresh parsley - chopped
- 1 x plump shallot - chopped pinches grnd red pepper - to taste
- 1/2 tsp salt
- 1/2 tsp fresh grnd pepper
- In a large saucepan, heat the butter and saute/fry' the garlic and shallot till very lightly tan.
- Stir in the flour till blended.
- Graually add in the beef broth, water, salt, red pepper, pepper, parsley and mushrooms and bring to a boil.
- Lower heat and simmer for thirty min, or possibly till the mushrooms are cooked.
- Bring back to a boil, and add in the shrimp and scallions.
- Remove from heat just before it returns to a boil.
- Season if neccessary and ladle into c. and garnish with grated parmesan cheese.
- Makes sufficient so which at least eight fishermen
