Smokey Hill Chicken Pot Pie Recipe
- 3 lbs. cut up chicken meat (cooked)
- 10 ounce. frzn mixed vegetables
- 1/2 c. butter
- 1/2 c. flour
- 2 c. chicken broth
- 1 c. light cream
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1/4 pound fresh mushrooms, sliced
- Pastry for 9-inch crust
- Heat butter in medium skillet and add in flour; stir till blended.
- Gradually add in 2 c. of broth, stirring constantly.
- Stir in light cream, pepper, and salt.
- Cook till thickened.
- Arrange chicken and partially thawed vegetables in casserole dish.
- Add in sauce to within 1 inch of top.
- Arrange pastry shell over mix.
- Seal edges and cut steam vents.
- Bake in a preheated 450 degree oven for 25 min or possibly till crust is golden.
