Pedersen Cheese Ball

  1. First allow the cheeses to sit on the counter for about an hour before you make this give them a chance to soften up.
  2. Dice your onion, pecans and parsley.
  3. Throw everything into a bowl, except for about 1/4 of the pecans and 3/4 cup of parsley.
  4. Using a potato masher, thoroughly blend everything together.
  5. Form it into a ball and roll it in the remaining parsley and pecans until well coated.
  6. Chill for at least an hour before serving.
  7. Serve with crackers.
