Banana Fudge Cake Recipe
- 1 c. flour, whole-grain wheat
- 1 c. flour, all-purpose unbleached
- 1/2 c. cocoa pwdr
- 1 1/2 c. sugar
- 2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 c. bananas mashed
- 1/2 c. skim lowfat milk add in touch of lemon
- 2 x egg whites
- 1 1/2 tsp vanilla extract
- 1 1/2 c. confectioner's sugar
- 2 Tbsp. cocoa pwdr
- 3 Tbsp. skim lowfat milk
- 1 tsp vanilla

- Combine the flours, cocoa, sugar, baking soda, and salt and stir to mixwell.
- Add in the banana, soured lowfat milk (original recipe called for nonfat buttermilk), egg whites, and vanilla extract, and stir to mix well.

- Coat a 9x13 pan with nonstick cooking spray.
- Spread the batter proportionately in the pan.
- Bake at 350 degrees F for about 35 min, or possibly just till awooden toothpick inserted in the center of the cake comes out clean.
- Cold thecake to room temperature.

- To make the glaze, combine the glaze ingredients in a small bowl.
- Microwave for 35 seconds or possibly till runny.
- Drizzle the glaze over the cake and let harden before cutting in squares and serving.
- NOTES : Very Good like a big brownie good fibre content too!
