Quick Quesadillas
- 1 Tablespoon Olive Oil
- 1/2 cups Ground Beef, Divided
- 1/2 teaspoons Garlic Powder
- 1/2 teaspoons Onion Powder
- 1/2 teaspoons Chili Powder
- 1/2 teaspoons Pepper
- 1/2 teaspoons Cumin
- 1 whole Lime, Juiced
- 4 whole Tortillas
- 1/2 cups Cheese
- 6 Tablespoons Salsa, Divided
- 1/4 cups Cherry Tomatoes, Halved
- Avocado Slices
- Salsa
- Light Sour Cream

- In a large frying pan, heat olive oil over medium high heat.
- Add ground beef, spices and lime juice.
- Stir until the beef is no longer pink.
- Once done, remove from heat and set aside.

- Preheat broiler.
- Lay 2 tortillas on a baking sheet.
- Place 1/4 cup of cheese on each tortilla.
- Divide ground beef and place half on each tortilla.
- Place half of the salsa and cherry tomatoes on each quesadilla.

- Top each quesadilla with a tortilla and place in the broiler.
- Broil until cheese is melted and quesadilla is crisp.

- Cut into quarters with a pizza cutter and garnish with avocado slices, more salsa and sour cream.
- Enjoy!
