No Egg Whole Wheat Flax 'n Apple Muffins

  1. Blend dry ingredients together in a bowl.
  2. In a separate bowl; combine flaxseed, water, oil, and milk.
  3. Add dry ingredients to "egg" mixture and stir just until blended.
  4. Fold in apples and nuts.
  5. Batter will be thick.
  6. Fill well-greased muffin cups 2/3 full.
  7. Bake at 400 degrees F for 18-20 minutes or until top springs back when touched.
