Quick Chicken Cacciatore

  1. Rinse chicken; pat dry.
  2. In a medium skillet combine undrained tomatoes, mushrooms, onion, green pepper, wine, garlic, oregano, salt, and pepper; place chicken atop vegetable mixture.
  3. Bring to boiling, reduce heat.
  4. Cover; simmer about 20 minutes or until chicken is tender and no long pink.
  5. Transfer chicken to a serving platter; keep warm.
  6. Stir together water and cornstarch; stir into skillet mixture.
  7. Cook and stir until tickened and bubbly.
  8. Cook and stir for 2 minutes more.
  9. Spoon sauce over chicken.
  10. Food Exchange per serving: 3 LEAN MEAT EXHANGES + 1 VEGETABLE EXCHANGE
