Sweet Cherry Preserves (Low Sugar)

  1. In a large, heavy saucepan combine 1/4 cup sugar and the package of pectin.
  2. Stir in cherries and almond extract.
  3. Bring to a full boil over medium high heat, stirring frequently.
  4. When the mixture begins to boil fold in the remaining sugar and return to a boil, stirring constantly.
  5. Continue to boil and stir for 3 minutes.
  6. Remove from heat and skim off any foam that has developed.
  7. Immediately spoon into prepared canning jars leaving 1/2 inch headspace.
  8. Process in a hot water bath for 10 minutes.
  9. Yields 3 pints.
