Apple Coffee Cake or Cinnamon Monkey Bread
- 1/2 cup water
- 1 1/2 large eggs beaten
- 3 tablespoons butter or margarine
- 3 tablespoons sugar
- 1 pinch salt
- 1 tablespoon xanthan gum
- 1 cup gluten free flour mix
- 1 cup rice flour white
- 2 teaspoons yeast, active dry quick rise
- 1/2 cup butter melted
- 1 cup sugar
- 1 1/2 teaspoons cinnamon
- 1 cup nuts finely chopped
- 1/2 cup raisins, seedless
- Upon completeion of dough cycle, divide dough into small balls (just smaller than an egg) and dip into 1/2 cup melted butter and then in the sugar mixture (1 Csugar, 1 1/2 teaspoon cinnamon, 1 cup finely copped nuts 1/2 cup raisins or craisins).
- Place in a greased tube or loaf pan, cover with a towel and let rise (draft free) for 30 to 40 mins.
- Bake in pre-heated 375F (190C).
