Pork Lettuce Wraps with Warm Peanut Sauce
- 1 Tbsp. sesame seed
- 1 tsp. ground ginger, divided
- 1 pouch Shake'N Bake Pork Coating Mix
- 4 boneless pork loin chops (1 lb./450 g) Safeway 1 lb For $1.99 thru 02/09
- 1/4 cup Kraft Peanut Butter
- 1/4 cup Miracle Whip Original Spread
- 2 Tbsp. each: water, honey and soy sauce
- 12 large lettuce leaves
- 3/4 cup shredded carrots Target 2 lb For $3.00 thru 02/06
- 1/4 cup chopped green onions
- Preheat oven to 400F.
- Add sesame seed and 1/2 tsp.
- of the ginger to coating mix in shaker bag.
- Add chops, in batches; close bag and shake gently to evenly coat chops with the coating mixture.
- Place in single layer in shallow baking dish.
- Bake 20 to 25 min.
- or until cooked through (160 degrees F).
- Meanwhile, mix peanut butter, Miracle Whip, water, honey, soy sauce and remaining 1/2 tsp.
- ginger in small saucepan; cook on medium heat 5 min.
- or until heated through, stirring frequently.
- Pour peanut sauce into small bowl; place in centre of large platter.
- Cut chops into thin slices.
- Arrange on platter along with the lettuce, carrots and onions.
- Spoon meat, carrots and onions onto lettuce leaves just before serving; roll up.
- Serve with the peanut sauce.
