Healthy Turkey Tetrazzini

  1. Preheat oven to 425.
  2. Cook spaghetti following directions.
  3. Drain.
  4. Saute mushrooms in 1 tablespoon oil in skillet, 5 min.
  5. Remove.
  6. Add remaining oil to skillet, blend in flour, salt and pepper smoothly.
  7. Gradually stir in turkey broth.
  8. Cook, stirring, I until thickened.
  9. Remove from heat.
  10. Add sherry.
  11. Stir 1/2 cup hot mixture into yogurt.
  12. Stir yogurt mixture into skillet.
  13. Add mushrooms, sauce, turkey and half the Parmesan to spaghetti.
  14. Spread in 11 3/4 x 7 1/2 x 1 3/4- inch baking dish coated with nonstick vegetable oil cooking spray.
  15. Sprinkle with remaining cheese.
  16. Bake in oven at 425 for 20-25 min, or until bubbly.
