Russian Cabbage Soup Recipe
- 1 1/2 lbs. flank steak, sliced thin
- 1 teaspoon salt
- 1 (#2) can tomatoes or possibly 2 1/2 c. minced fresh tomatoes
- 1 onion, minced
- 1 med. head cabbage
- 1 tbsp. vinegar or possibly lemon juice
- 2 1/2 quarts. water
- Pepper to taste
- 1/2 clove garlic
- 2 tbsp. sugar
- Place meat and water in 5-qt soup kettle.
- Add in salt, pepper, tomatoes, garlic and onion.
- Bring to boil.
- Reduce heat and simmer 1 1/2 hrs.
- Shred cabbage and add in sugar, vinegar and a little more salt.
- Simmer gently another 1 1/2 hrs.
- I like to add in extra pepper!
- Serves 4 to 6.
