Twice baked potatoes
- 3 slices of bacon
- 2 green onions
- 5 med. potatoes
- 1/2 cup chicken stock
- 1/2 cup plain greek yogurt
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup grated chedder cheese
- Preheat oven 350 F
- Slice bacon into 1/4 slices and cook over med.
- Heat for 10 minutes or until crisp
- Slice green onions
- Chop potatoes into cubes
- Place potatoes, stock, and onions into dish.
- Microwave covered for 12 minutes, stirring halfway through
- Add yogurt, bacon, salt, and pepper.
- Coarsely mash and mix until well blended.
- Sprinkle with cheese
- Bake uncovered for 10 minutes
