Chicken Black Bean Chili
- 2 large chicken breasts
- 2 (14 ounce) cans stewed tomatoes
- 1 cup onion (Chopped)
- 3 (16 ounce) cans black beans
- 1 (15 ounce) can corn
- 3 tablespoons olive oil
- 1 cup water
- 3 minced garlic cloves
- 3 teaspoons chili powder
- 12 teaspoon cayenne pepper
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 2 teaspoons salt
- 1 teaspoon pepper
- Boil whole chicken breasts till done.
- Cut up chicken into small pieces.
- In a large pot place chicken, tomatoes, onions, oil, water, garlic and all seasoning.
- Simmer for 15 to 20 minutes.
- Add (drained) beans and corn then simmer for another 10 to 15 minutes.
- Season to your taste buds.
