Chilli Con Carne with Nachos
- 1 tablespoon oil
- 1 large onion, chopped
- 2 teaspoons minced garlic
- 500g lean beef mince Safeway 1 lb For $5.99 thru 02/09
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 2 teaspoons dried oregano
- 1 teaspoon chilli powder (more if desired)
- 400g canned crushed tomatoes
- 3 tablespoons vinegar
- 440g canned kidney beans, rinsed and drained
- 1 green capsicum, chopped
- salt and pepper, to taste
- 100g KRAFT* Nachos In A Biskit*, to serve
- Heat oil in a saucepan and saute the onion and garlic until softened.
- Add the beef and cook over a moderate heat until browned.
- Stir in the spices and cook a further minute then add tomatoes and vinegar.
- Simmer for 20-30 minutes.
- Add the kidney beans, capsicum, salt and pepper and simmer uncovered 5 minutes, or until the capsicum is just tender.
- Serve with Nachos In a Biskit*.
