Corn Cobbler

  1. Place potatoes, onion, salt, pepper and water in a large saucepan.
  2. Bring to a boil and boil, uncovered, for 5 minutes.
  3. Add corn.
  4. Return to boiling and boil for 2 minutes.
  5. Drain.
  6. Add 1-3/4 cups milk, green onions and parsley.
  7. Pour into a grease 13x9x2-inch baking dish.
  8. Top with eggs.
  9. Mix biscuit mix and remaining milk until smooth.
  10. Drop by teaspoonfuls onto corn mixture.
  11. Bake at 450F for 13 to 15 mintues or until done.
