Sliced Beef With Tomato and Onion for Two

  1. Cut beef into 2x1x1/4" slices.
  2. In a small bowl, toss meat with cornstarch and soy sauce to coat evenly.
  3. Cut tomatoes into 6 wedges each.
  4. In a wok, heat oil over high heat until smoking.
  5. Add scallion and ginger and stir fry until aromatic, about 30 seconds.
  6. Add onion and stir fry until onion is soft, about 2 minutes.
  7. Add beef and stir fry until meat is just browned, about 3 minutes.
  8. Add tomatoes and 1 Tblsp.
  9. water; toss to mix and heat through, 30-60 seconds.
  10. Remove from heat.
  11. Add sesame oil, stir to blend, and serve.
