Curried Shrimp in Coconut Milk
- 2 12 cups unsweetened coconut milk
- 2 tablespoons yellow curry paste
- 1 tablespoon fish sauce
- 12 teaspoon salt
- 1 teaspoon sugar
- 1 lb jumbo shrimp
- 8 ounces cherry tomatoes
- 12 lime juice
- 1 tablespoon cilantro (or to taste)
- Put 1/2 the Cocoanut Milk in pan or Wok and bring to Boil.
- Stir in the Curry paste to Coconut Milk, simmer for approximately 10 minutes.
- Add the Fish Sauce, Salt, Sugar and remaining Cocoanut Milk and simmer for 5 minutes.
- Add the Shrimp and Cherry Tomatoes gently simmer until the Shrimp are pink and tender - about 5 minutes.
- Serve over Rice.
