Chocolate Gateau at Home
- 30 grams Finely grated chocolate
- 50 grams Milk
- 20 grams Cocoa powder
- 20 grams Cake flour
- 2 Egg yolk
- 2 Egg white
- 40 grams Granulated sugar
- 1 tbsp Brandy
- Combine Ingredients and sift.
- Melt ingredients in a double broiler or a microwave.
- Preheat oven at 170C.
- Into the egg whites, add half of the granulated sugar in 3 batches to make a meringue.
- Chill in the fridge when done.
- Add the rest of the sugar into the egg yolks and mix well until white.
- Fold in the melted ingredients and also the brandy.
- Then add the ingredients and whisk until it's not floury.
- Add one scoop of the meringue into the batter from step 3.
- Mix well with a whisk.
- Using a rubber spatula, fold in the rest of the meringue in two batches.

- Pour into the cake pan lined with parchment paper.
- Moisten with a squirt of water.
- Pour hot water into a baking sheet and drop the temperature to 160C.
- Steam-bake for 40 minutes.
- When done, peel parchment paper from its sides and cover it with a pan.
- Set aside to cool on a cake cooler.
- Make an open heart cake using the same amount of ingredients Instead of steam-baking, you could also bake for 15 minutes at 170C and 10 minutes at 160C.
- The result turned out nice, and took less effort.
- After it's cooled down, sift some powdered sugar to finish.
- For drinkers: brush on some brandy on the surface to improve its taste It tastes better if you let it rest in the fridge and serve it the following day.
