Chicken Wraps with Asian-Mango Salsa
- 2 whole Tomatoes, Diced
- 1 whole Jalapeno, Seeded And Finely Chopped
- 1/2 whole Red Onion, Diced
- 1 whole Mango, Peeled And Diced
- 1/4 cups Fresh Cilantro, Chopped
- 4 Tablespoons Soy Sauce, Divided
- Salt And Pepper, to taste
- 1/2 cups Mayonnaise
- 4 Tortillas (8 Inch)
- 2 cups Cooked Chicken, Cut Into Bite-sized Pieces
- In a medium bowl, combine the tomatoes, jalapeno, red onion, mango, cilantro, and 2 tablespoons soy sauce.
- Season to taste with salt and freshly cracked black pepper.
- Set aside.
- Combine the mayonnaise and remaining soy sauce in a small bowl.
- Set aside.
- To assemble wraps, warm tortillas in the microwave on high for 10-15 seconds.
- Spread a light layer of soy-mayo over the tortilla.
- Spread chicken down the middle of the tortilla.
- Top with salsa.
- Wrap like a burrito and enjoy!
