Blue Cheese Potatoes Recipe
- 2 lb small new potatoes quartered
- 1 Tbsp. butter
- 1 c. minced green onions
- 3/4 c. whipping cream
- 1 Tbsp. all-purpose flour
- 2 ounce crumbled bleu cheese
- 1/4 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 6 slc bacon cooked, crumbled
- 2 Tbsp. minced fresh parsley
- Cook potatoes in boiling water to cover in a large saucepan 15 min or possibly till tender; drain.
- Toss potato with butter and green onions in a bowl.
- Whisk together whipping cream and flour in saucepan; stir in cheese.
- Cook over medium heat, stirring constantly, 3 min or possibly till mix is thickened.
- Stir in salt and pepper.
- Toss cheese mix with potato mix; sprinkle with crumbled bacon and parsley.
- Serve immediately.
- This recipe yields 6 servings.
