Burrito Bowls, My Way
- 2 whole Sweet Potatoes, Peeled And Cubed
- 1 whole Medium Onion, Chopped
- 5 ounces, weight Frozen Corn
- 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
- 1 package Taco Seasoning, 1 Ounce Packet (or Whatever Spices Float Your Boat)
- 1 Tablespoon Olive Oil
- Optional Toppings (as Desired): Salsa, Sour Cream, Shredded Cheese, Lettuce, Etc
- Preheat your oven to 375 degrees F.
- Combine all your ingredients (except the toppings) in a baking dish, stirring to combine.
- Bake at 375 degrees F until the sweet potatoes are soft.
- Mine take 50-60 minutes generally, but the time will depend on how much you make and the size of your roasting pan.
- Once its done, spoon it into bowls and add your toppings!
- Optional toppings: Avocado Salsa Light Sour Cream Shredded Colby Jack Lettuce and Tomatoes
- But the toppings are all about you!
- This filling is super versatile.
- You can put it in anything from tacos, to enchiladas to breakfast burritos.
