Sparkling Mimosas
- 1-1/2 cups boiling water
- 1 pkg. (6 oz.) JELL-O Orange Flavor Gelatin
- 2-1/2 cups cold seltzer
- 1 can (11 oz.) DOLE Mandarin Oranges, drained
- Add boiling water to gelatin mix in large bowl; stir 2 min.
- until completely dissolved.
- Stir in seltzer.
- Refrigerate 40 to 45 min.
- or until thickened but not set.
- Reserve 1 cup gelatin; place in medium bowl.
- Set aside.
- Stir oranges into remaining gelatin; spoon into 8 champagne glasses.
- Beat reserved gelatin with mixer on high speed until doubled in volume; spoon over gelatin in glasses.
- Refrigerate 3 hours or until firm.
