Sparkling Mimosas

  1. Add boiling water to gelatin mix in large bowl; stir 2 min.
  2. until completely dissolved.
  3. Stir in seltzer.
  4. Refrigerate 40 to 45 min.
  5. or until thickened but not set.
  6. Reserve 1 cup gelatin; place in medium bowl.
  7. Set aside.
  8. Stir oranges into remaining gelatin; spoon into 8 champagne glasses.
  9. Beat reserved gelatin with mixer on high speed until doubled in volume; spoon over gelatin in glasses.
  10. Refrigerate 3 hours or until firm.
