Cheese and Mustard Drumsticks
- 1 cup natural Greek yogurt
- 60 g parmesan cheese, grated
- 14 cup dried breadcrumbs
- 1 tablespoon Dijon mustard
- 12 cup flat leaf parsley, chopped
- 8 chicken drumsticks
- Preheat oven to 200C Line a large roasting pan with baking paper.
- Combine yoghurt, parmesan, breadcrumbs, mustard and parsley in a large bowl.
- Season with salt and pepper.
- Coat each drumstick in yoghurt mixture.
- Place in prepared pan.
- Cover with foil and roast for 20 minutes.
- Remove foil and roast for 20 to 25 minutes or until golden and cooked through.
- Allow to cool in pan.
