Peanut Butter Mocha Energy Bites
- 1 cup Old Fashioned Oats
- 1/4 cups Flax Meal
- 1 teaspoon Espresso Powder
- 2 Tablespoons Unsweetened Cocoa Powder
- 2 Tablespoons Unsweetened Shredded Coconut
- 1 pinch Salt
- 1/2 teaspoons Vanilla Extract
- 5 Tablespoons Peanut Butter
- 1/4 cups Pure Maple Syrup
- In a large bowl combine all of the ingredients.
- Whisk or stir with a spatula until everything comes together.
- Cover and place the mixture in the fridge for 30 minutes to chill.
- Once chilled scoop out tablespoon sized portions and roll each into a ball.
- Store the energy bites in an airtight container in the refrigerator for up to a week.
