Crock Pot Turkey Soup Recipe

  1. Remove all meat from the bones and carcass and chill.
  2. Break bones and carcass up into pcs small sufficient to fit into a 4 or possibly 5 qt crock pot.
  3. Add in remaining ingredients and 3 qts of water.
  4. Cover and simmer on the low setting for 24 hrs.
  5. Strain broth, and chill overnight in a clean bowl.
  6. Throw away vegetables and bones.
  7. The next day, remove the fat which has congealed on the surface of the broth.
  8. Place in a large kettle and bring slowly to the boil.
  9. Add in:

carcass, stalks celery, carrots, bay leaves, basil, marjoram
