Baked Fish With Tomatoes And Spices Recipe
- 1 lrg Onion, sliced
- 2 x Cloves garlic, minced
- 2 x Jalapeno chiles, seeded and minced
- 1 can (16-oz) whole tomatoes, liquid removed and minced
- 2 Tbsp. White vinegar
- 1 1/4 tsp Grnd cumin
- 3/4 tsp Grnd coriander
- 4 x Halibut or possibly other lean fish steaks, about 1 inch thick
- Heat oven to 350 degrees.
- Spray 10-inch nonstick skillet with nonstick cooking spray.
- Cook onion, garlic and chiles in skillet over medium heat, stirring frequently, till onion is tender; reduce heat.
- Sir in remaining ingredients except fish steaks.
- Simmer uncovered over low heat 5 min, stirring occasionally.
- Arrange fish in ungreased rectangular baking dish, 11 x 7 x 1-1/2 inches.
- Spoon tomato mix over fish.
- Bake uncovered 25 to 30 min or possibly till fish flakes easily with fork.
- Sprinkle with minced fresh cilantro if you like.
- 4 servings.
