Stuffed Chicken with Carmalized Onions
- 4 chicken breast
- 4 clove garlic - diced
- 3/4 cup spinach - chopped
- 2 onions - chopped
- 1 bottle - blue moon beer
- 3/4 cup vegatable oil
- 1/2 cup mushrooms diced
- place 3/4 cup of olive oil in a large skillet on high heat add onions and stir constantly for 20 minutes
- after 20 minutes poor full bottle of beer into skillet and stir constantly until onions begin to carmalize, after carmalization place onions in a bowl and set aside
- slice all four chicken breast in the middle and set aside,mix garlic, spinach and mushrooms, a tbsp of red wine vinargrette in a bowl
- stuff spinach mixture into chicken and place breasts into same skillet, ads rest of olive oil and cook for 20 minutes at medium heat or until ckicken is golden brown
- after chicken is golden brown place chicken breasts on a plate and top with carmalized onions and serve
