Stuffed Chicken with Carmalized Onions

  1. place 3/4 cup of olive oil in a large skillet on high heat add onions and stir constantly for 20 minutes
  2. after 20 minutes poor full bottle of beer into skillet and stir constantly until onions begin to carmalize, after carmalization place onions in a bowl and set aside
  3. slice all four chicken breast in the middle and set aside,mix garlic, spinach and mushrooms, a tbsp of red wine vinargrette in a bowl
  4. stuff spinach mixture into chicken and place breasts into same skillet, ads rest of olive oil and cook for 20 minutes at medium heat or until ckicken is golden brown
  5. after chicken is golden brown place chicken breasts on a plate and top with carmalized onions and serve
