Pat's Ham & Bean Soup

  1. In large kettle over high heat, boil beans in 10 cups of water for two minutes.
  2. Remove from heat, let stand for one hour.
  3. In large Dutch oven over medium heat, brown sausage.
  4. Add onions, stir muntil onions are tender.
  5. Stir in ham, cook for a few minutes.
  6. Drain asny excess fat.
  7. Add beans and their liquid.
  8. Add salt & pepper.
  9. Cook, covered, over low heat 1 hour or until beans are tender.
  10. Add vegetables.
  11. Cook, covered until veggies are tender, stirring occasionally.
