Indian Sandwich
- 1 14 cups fresh soft cheese (farmer, ricotta, pot, goat or cottage)
- 12 cup plain low-fat yogurt
- 13 cup thinly sliced carrot
- 1 small tomatoes, seeded and diced
- 12 cup diced green bell pepper
- 12 cup thinly sliced cucumber
- 13 cup mixed fresh herbs (such as parsley, basil, dill or mint)
- 1 tablespoon candied ginger
- 12 teaspoon hot sauce
- salt
- 4 pita pocket bread or 4 wheat flour tortillas, sliced in half
- In medium bowl, combine all ingredients.
- Serve in pita bread pockets or rolled in wheat tortillas.
