Banana Empanadas (From Ninfas) Recipe
- 2 1/2 c. flour
- 3/4 c. hot water
- 1 tsp sugar
- 1 tsp salt
- 4 Tbsp. shortening
- 1 x egg yolk, optional
- Measure flour & sugar into bowl, stir to mix.
- Add in shortening a cut into flour.
- Dissolve salt in water and fold in egg yolk if using.
- Add in to flour mix to create a medium stiff dough.
- Knead 4-5 min into a smooth ball.
- Divide into 8-10 equal parts.
- Roll into balls, cover w/plastic wrap and let rest 20-30 min.
- Roll each ball into a flat, round tortilla shape.
- Place on warm pan, cook briefly on one side.
- On the center of the cooked side, place filling (below).
- With pastry brush, brush egg white around the edges and fold it over to create 1/2 moon, press edges w/fork.
- Cook in oil (350 degrees) for 2 min, turn as necessary till browned.
- Remove and drain on paper towels.
- Sprinkle with powdered sugar and cinnamon.
- Garnish as desired.
- FILLING:Banana slices1 Tbsp.
- raisins1 Tbsp.
- minced pecans1-tsp.
- honeyegg white
- GARNISHES: powdered sugar, cinnamon, banana slices, raisins, vanilla ice cream, caramel sauce
