Simple rice noodle soup
- 2 rice noodles
- 1/4 bunch spinach (leafs only)
- 4 spring onions chopped
- 1 liter boiled water
- 1 chicken stock cube
- 1 tbsp sesame oil
- 1 fresh chilly pepper
- 1/2 tsp Chinese 5 spice
- 5 tbsp soy sauce
- Put pan on stove and put on medium heat
- Add sesame oil and let it warm up
- Add chopped spring onion and stir for 1 min
- Put in chopped chilly peppers and stir for another minute
- Add Chinese 5 spice and stir for another 2 minutes.
- Put the cooked onions and chilly peppers in a plate and set aside
- Add water to pan and stock cube.
- Stir and make sure you use your wooden spatula to get any flavour stuck on your pan
- Let the water come to a boil and lower heat to low/medium.a
- Add rice noodle and separate them every now and then.
- Let them cook for 2 mins
- Add back onions and chilly peppersa
- Add spinach and soy sauce and stir
- Let it cook for 5 minutes.
- Taste and add soy sauce and salt accordingly
- Take off the heat and serve!
