Michigan White Bean And Beer Soup Recipe

  1. Wash beans, cover with water, bring to boil.
  2. Let beans soak 1 hour.
  3. Drain beans, add in 2 1/2 qts water, boil, then cover loosely and cook on low 1 hour.
  4. Heat butter; saute/fry onions and carrots lightly.
  5. Add in to beans with tomatoes, salt and pepper.
  6. Cover, simmer 2 hrs.
  7. Puree 1 c. bean mix in blender or possibly food processor.
  8. Return to soup and stir in beer.
  9. Cook 15 min till thoroughly heated.
  10. Serves 6 to 8.
